If there's one place which was highly recommended everywhere (in publications, online blogs, online reviews sites, tv shows) to have Authentic Kapampangan Cuisine, it would be Everybody's Cafe.
Thus, we squeezed it into out itinerary.
We arrived there around 9 pm and we were practically the only customers of this popular place.
It looks like a carinderia (even with flies). Just with a better table set up since there is a table cloth.
The dishes are displayed like in a carinderia or turo-turo style canteen.
They have no menu and the set-up was like this so we had the impression that the food would be affordable. We ordered the ♥ Morcon (360 php) for take out. I think that is the their most impressive dish.
Unlike me, it is the family's first time to try the Kapampangan exotic dishes.
Food
I was really excited to let the family try the Camaro. I've had a pleasant experience with the camaro by Ikabud, Bistro Remedios and during the Marquee Mall's Big Bite! Unfortunate, this one is not as good. =( I felt bad that the family had to try this not-so-crispy, bland and greasy version at such an expensive price too!
The Kalderetang Kambing is delicious with a little spiciness to it. It was tender enough but the serving was small and had lots of bones so felt that the pricing is not justified.
I forgot how much the Betute was but I'm pretty sure it was also every expensive as it was priced per piece. Compared to the Camaro, this is much better. But, I still didn't like it's oiliness. I suggest you try Cely's Carinderia and Abe's instead.

Thanks to the Metro Angeles Food Tour 2014 (#MAFT2014), I got to visit Abe's Farm in the municipality of Magalang Pampanga.
I've tried Abe at the SM Mega Fashion Hall before. But being a nature lover, Abe's Farm scenic and native ambiance is more to my liking.
The restaurant is set up in a native kapampangan home which was originally built as LJC's founder Larry Cruz rest house.
Although the place is huge, the dining area is quite limited to grant the diners privacy and comfort.
The second floor has lofts and sofas were you can just chill out.
We chose to dine in this area to enjoy some fresh air and scenic view of the pool.
Food
Appetizers and Salads
The Sinuteng Baby Squid is sauteed baby squid in olive oil with garlic and chili. This is a simple dish that relies on the quality of the tender baby squids. It was executed well.
The Prinitong Lumpia is a crispy-coated, crunchy veggie-filled starter.
The Paco Fern and Tomato Salad is a bountiful salad with paco fern, raw onion rings, tomato strips and salted egg slices.
Main Courses
The Binukadkad na Pla Pla is a butterflied pla pla served with balo-balo relish and mustasa leaves.
I've Knockout Knuckles before at Cafe Adriatico. It's as good as the first time I tried it.
Their version of Kare-Kare is so rich and generous with ingredients too. I couldn't stop indulging myself over this with their addicting bagoong.
I've also tried the Lola Ising's Adobo at Cafe Adriatico. This adobo belly chunk is so tender and tasty! Like I said before, one of the best adobo out there.
I love frog dishes since childhood so I was not as intimidated as my companions with it. The Betute was savory, tender and clean tasting. The pickled vegetable served with it is the perfect accompaniment to cleanse the palate too.
Vegetables
It's actually my first time to try the Gising Gising. I enjoyed the crunchy small cuts of kangkong stem with shrimps and chili swimming in a pool of coconut milk.
Rice, Noodles and Side Dishes
Everyone was impressed with the Bamboo Rice. Aside from being steamed in bamboo shell, it was also sumptuous and rich in flavor. The mountain rice is topped with wood ear mushrooms, shrimps and bamboo shoots.
Desserts
The Sikreto ni Maria is probably the most extravagant version of the classic suman at mangga. The suman and mango slices are covered by their amazing coconut milk and carabao milk ice cream.
The Turon Saging with Langka at Ube is good but I prefer the former.
Drinks
The staffs highly recommends the Tamarind Shake made from fresh tamarind. This is indeed a one of a kind beverage that's a must try!

Ever since our encounter with Kapampangan food during the Culinaria Capampangan by Chef Sau at Corniche, I've been eager to try more of their dishes. When my friend invited me to be the guest of Mayor Ed Pamintuan of Angeles City to experience their Pamangan Fiestang Kapampangan 2012 at The Culinarium of Museo Ning Angeles, I quickly said yes in excitement despite the fact that the following week was finals week.
We were given a tour around Museo Ning Angeles then proceeded to the dining area of The Culinarium. According to our host and fellow food blogger, Wyatt Belmonte, there only offer this special buffet during special occasions so we are very fortunate to try it out. The buffet ticket is sold for the subsidized price of only 500 php so its no surprise that a lot of people have come to avail. I was surprised with how much they had to offer for the price. I'm sure you'll agree with me too!

The Ensaladang Apalya at Paku is a great starter. It had bits of egg, tomatoes, paku (edible fern) and amplaya (bittermelon). The ampalaya was not bitter at all. Perhaps, because it was boiled and mixed with so many fresh ingredients.

I know some of the dishes are sinful enough, but I just couldn't resist the Organic Lechon. The pork meat was so succulent and tender. While the skin was so tasty and crunchy.

I don't know if its because of my roots but this is my first time to try a Philippine cooking of frogs. I've often enjoyed eating frogs but they are always cooked Chinese style. For a first time, the Betute Tugak has certainly left me with a good impression. I bet that if you weren't eating out from the frog's body, you wouldn't have a clue that you're eating frogs. The frog stuffing had a clean sumptuous taste.

When the Adobung Camaru was presented to me, I'll admit that I was hesitant to try. These mole crickets looked similar to the Beondegi (Silkworm Pupa) of Korea which left a lingering bitter experience for me. But, when I tried it out, it was surprisingly good. It was cooked adobo style with soy, vinegar, onions and tomatoes. It felt like munching on crispy shrimp. There was nothing thorny about it. The taste was a mixture of soy, vinegar and liver.

Look at my plate with banana leaves and filled with all the dishes. Yes! I tried all of them. =D The Chicken Barbeque by Grand Palaccio Royale and the ♥ Asasung Dila by Batis Asul was also delicious by the way.

Tsinoy Foodies Verdict
Pampanga is known as the food capital of the Philippines. But, travelling to each town home or restaurant to eat each of their best recipes is too much of a hassle. So, I truly feel so fortunate for having a chance to enjoy almost all of Pampanga's recipes in one sitting. I highly recommend that you join in their festivities and tours to appreciate their delectable cuisine!
