Moul Chheng-Heang: Unforgettable Tom Yum and Frog Legs (Siam Reap Cambodia)

When I booked a flight to Siam Reap for a solo trip, my family was surprised why there. I said why not? It was amazingly cheap! Soon, my best friend joined in but none of us prepared an itinerary because we were both busy with work. We ended up relying on Tripadvisor and other online tips which led us to Pub Street. It was only on our last day that I took my time to explore and discovered Moul Chheng-Heang along Taphul Road.
I invited my friend but it was not chic enough for him. He decided to dine elsewhere. While dining, I got to talk to tourists near my table.
The place is downright simple but its always packed with people even without a Tripadvisor Sticker or rating which restaurants in Pubstreet boast of.
Food
When you see restaurant signs or menu with "Khmer", you'd think that "Khmer" cuisine is the same as "Cambodian" cuisine but its not. But the two cuisine are different in a way that one is broader than the other. Khmer is more specific to the indigenous dishes. Cambodian carries with it influences from China, India, Myanmar, Vietnam, Thailand and France.

To be honest, I have been searching all over Manila for a good Tom Yum. But, I have never felt satisfied. Once I tried Moul Chheng-Heang's version, I instantly acknowledged that it is by far the best Tom Yum Seafood I have ever tasted! I think the secret is in its ingredients. It even has the Fingerrooot which is called k'cheay in Cambodia or ខ្ជាយ in Khmer.

While we often use Dried Black Peppers in the Philippines, I have never encountered Fresh Green Peppers or Kampot before. In Cambodia, they use it a lot in generous amounts! Based on my research, both peppercorns come from the same plant. But, the process is different. Perhaps pepper farms there are more accessible so they can get them fresh from the market. Anyway, the Fried Frog with Green Peppers beats all Chinese frog dishes I've tried here in Manila! I don't think its just because of the pepper but in the cooking preparation as well. The frog meat tastes clean and fragrant and tender and juicy as well.
Like in the Philippines every meal is served with rice. Since I ordered two dishes, I was supposed to have two bowls of rice. But, told them I'd only have one. The rice is similar here too!

You can find fresh fruit shakes in every street in Siam Reap for a standard rate of 1 USD so I found this Fresh Mango Shake at 0.50 USD a bargain! I bought one during my meal and one to go. I saw other customers doing that too!
Tsinoy Foodies Verdict
Had I discovered Moul Chheng-Heang as soon as I landed in Siam Reap, I would have eaten here more often and tried more of their dishes. This place made my Siam Reap trip quite memorable. In Siam Reap, even food stalls offer free WiFi. The WiFi here is also fast and reliable.

Fukudaya: Modern-Traditional Japanese Fare Made from Market Fresh or Japan Imported Ingredients (Arya Plaza BGC)
One of the older
establishments in Arya Plaza, but certainly not forgotten, is Fukudaya. Since
its doors opened last August 2016, Fukudaya has continued to delight diners
with Modern-Traditional Japanese dishes. Under the helm of Chief Sushi Chef
Koji Oki, Fukudaya has built-up a quiet reputation for serving high-quality
seafood on this side of BGC.

Modern and Traditional, two
distinct words describing two opposite states. How could something be both
Modern and Traditional? For this occasion, Chef Oki-san stepped outside the
kitchen and shared how his team is able to deliver Fukudaya’s promise of a
Modern-Traditional Japanese dining experience. By Traditional, Fukudaya stays
true to the taste of well-loved Japanese dishes by using fresh Japanese ingredients
such as but not limited to dashi, sake, dried, bonito, shiitake, and salmon.
Modernity is expressed by the use of modern precision cooking methods, in
particular, sous-vide cooking. This ensures that meats are cooked just right to
maintain tenderness previously unachieved by traditional cooking methods.
Keeping true to the tradition of the simplicity of the Japanese, for our visit, Chef Oki-san and his team prepared a humble 3-dish sampler of Fukudaya’s bestsellers.
Food
To start, we were treated to Salmon Carpaccio w/ Sliced Radish —my personal favorite, followed with a plate of Shrimp Tempura Roll Sushi, affectionately called Ebiten Roll by the staff, and finally closed with Australian Wagyu Steak cooked in Garlic Sauce with Assorted Grilled Vegetables.
Fukudaya also offers special private tasting menus by
request and provides catering services for private events.

It is impossible for me to write about these three dishes individually--as
I believe these should be discussed altogether. Ask any Japanese cuisine
aficionado and consistently, you’ll hear praise for the freshness of the
ingredients—the true star of Japanese cuisine—oft accompanied by simple flavors.
The Fukudaya dining experience is no different. The focus of each dish served
was the freshness of the salmon or the shrimp, or tenderness of the beef accompanied
with only a tinge of flavor, bordering bland, to accompany and highlight the
freshness of these ingredients. Yes, the taste would not be too exciting on the
tongue but I would want nothing other than focusing on the ingredients from a
Japanese restaurant.

I wonder why... when I'm home I always seem to find something to do that I can't seem to want to go out. Then, I receive an invite for the #LJCXZomatoFoodCrawl. Finally, something draws me out and brings me to our first stop: Lorenzo's Way.
It has an interior that is similar to a heritage Filipino home. It was so comfortable that we didn't notice the time flew by as we sat down and dined.
Food

As expected from any LJC group restaurant, classic dishes like this Caesar salad is executed perfectly.
Paellas

These days, I've been eating rice-free meals. But, I guess I'm to weak against the fragrant and flavorful Paella Valenciana. A taste of this was not enough, I had to succumb and devour even to the crispy brownish layer.
Main Courses

Look at the precise grill marks on the Inihaw na Sugpo. You could tell by the looks that each bite into its soft and tender meat delivered a delicious juice that fills your mouth with a wonderful sensation.

I'm happy to be acquainted with the lavishing Costillas de Ternero Guisada. The tender beef had a sauce that an exquisite red wine essence that lingers on your taste buds.

I don't think there's any dish that could dazzle the entire crowd like the Spanish Garlic Chicken. Who would have thoughts that chicken with a bountiful amounts of garlic cloves would be an irresistible culinary masterpiece? It reminds me of the words of wisdom my mentor Ed shared to us "Your can compare cooking to life. Life is simple, You only need to have the essential ingredients to make you happy."

The Black Pata is actually one of my favorite Chinese dishes. Unfortunately, we don't cook this at home because it's too tedious to prepare so I am so happy when I get a chance to have this. Our former cook used to cook this dish excellently. Because of him, I had high standards. This version passed my standards in terms of meat texture. It's just too rich and sweet for me.
Vegetables

While the Adobong Puso ng Saging at Gambas does not appear to be as grand as the other dishes, it served an essential part of our meal. It had a refreshing tangy flavor brought by the harmonious mix of vinegar and soy that reset our palates after having the more savory dishes.
Noodles, Pasta, and Rice

The Pancit Sotanghon sa Baby Pusit with a hint of kamias and squid ink on the bouncy crystal clear noodles brought a tasty massage in every mouthful. This reminded me of the Pancit Puti which I tried at Mangan. Both were pancit sotanghon dishes with kamias. But, the Pancit Puti had chicken essence while this one had squid ink essence.

Because I'm a huge fan of pistachio nuts, I fully appreciate the Baklava. The Baklava I have encountered in the past is a light, slightly greasy and flaky square type. This is different and has a defining characteristic. It has a crisp coating and crunchy filling. It is not greasy at all. I liked it very much!

Rolls Republic: 75 Peso Breakfast with Brewed Sagada Coffee and Eat All You Can Rolls (Avenue of the Arts)
Residing near Malate, I have always been amused by the lively neighborhoods restaurants and cafes.
To my surprise, there's a cool concept that has been under my radar - Rolls Republic.
What brought my attention is Rolls Republic 1st Year Anniversary Speedy Rolls Festival where they offered Eat All You Can rolls buffet.
As soon as I went in, I found out they also offered Party Platters and they also offer delivery.
These are a good idea for potlucks!
I like the bright and casual vibe of the place. It looks clean and on point. I'd happily dine here for rolls and go. Or because they offer Free WiFi, I'd prefer hanging out at this place over the dark and cozy ambiance of famous coffee shops.
Rolls Republic has a giant map with spheres signifying their rolls conquering the world. And, their slogan comes in different languages.
Breakfast Rolls with FREE Coffee (6am to 10 am)
If only I was a student or a bar reviewee again, I would be here for breakfast and longer everyday. Not only do they offer FREE WiFi, they also offer an unbelievably priced breakfast with FREE Brewed Sagada Coffee. Another
thing that makes them an ideal breakfast place is that they open really
early! And, during that time there are a lot of parking spaces
available. And, did I mention how much I spent for this sossy-looking and very fulfilling breakfast? Only 75 php!!!
I also like their packaging. I have to admit, I don't usually buy grab to go snacks at convenient stores because the packaging doesn't look appetizing. Of course, it is also given that we know its been sitting there for days and I had a couple of experiences of buying spoilt food and moldy sandwiches. That's another great thing with Rolls Republic, the rolls are made fresh upon your order. They are very professional and prepare them very fast. They suggest that you consume your order within 24 hours for freshness. If you're lazy you can just buy this leave them on the freeze and eat them whenever you feel like it without need for reheating.
This Spam Omelette Roll is just the way I like it... with ketchup to boot. I am very impressed with how they were able to blend local rice like the malagkit to make the rice really sticky and composed similar to that of a high-quality sushi that makes use of Japanese rice.
Eat All You Can Rolls Buffet
Before moving on with the eat all you can rolls buffet, let me just share about the roll variants available at Rolls Republic that distinguishes them from other rolls concept:
They offer 4 kinds of Eat All You Can Sets so you can choose according to your preference or budget. The slices of their Eat All You Can is small than their usual roll (1 normal roll = 5 Eat All You Can piece) so you get to try more than variants in your 90 minute time limit. The size is actually the same as their Sushi Cake (the one with the carrot flower in the picture) which they sell by order for only 3,000 php and serves 30 people and their Party Platters.
2. Set B: Chicken/Pork 200 php/pax
I bet many of you are wondering how many rolls did I handle in our 90 minute seating? I went there very hungry and only handled 20 rolls. Think you can beat that? The rolls were heavier than I thought. But, the best thing about the experience is we didn't feel overwhelmed or "Umay" even though our bellies were very stretched because the variants are really appetizing.

Eat All You Can Rolls Buffet
Before moving on with the eat all you can rolls buffet, let me just share about the roll variants available at Rolls Republic that distinguishes them from other rolls concept:
- First, they do not offer Japanese sushi with raw ingredients. All their ingredients are freshly cooked. While I also enjoy sushi with raw ingredients, I agree that this is a good idea since I have friends who don't eat raw. And, some can't eat raw. I mean they really can't. In fact, my realization comes with a story. Before I didn't believe that some people can't eat raw so I used to force my ex to eat sushi and sashimi with me. And to my surprise, his body would involuntarily reject the raw ingredients as he has to barfs them just a few minutes after intake. After the third consecutive time, I gave up making him eat raw. =p
- Second, their rolls are international cuisine inspired. Most of their rolls are unique as they are creatively concocted by their very own chef. Genius!
