I've noticed that many food places and bars have strategically positioned themselves near colleges and universities. Perhaps if it was like that during my college days, I wouldn't be so anti-social. Well, anyway there's a new Tex-Mex place called Coyotoe Cocina!
While many of the establishments are still closed, Coyotoe Cocina alone is worth the visit.
I really like the spacious and modern design as well as the spacious dining and parking area of The Pop Up Katipunan. But, I can't imagine how hot this place is during the day time so I would suggest that you go at night.
I think its really the ideal home for a Coyote Cocina.
The ambience is minimalist. Aside from a few wall arts and artifacts to hint of its tex-mex influence, there isn't much to see.
It has a counter wherein you can see its open kitchen...
and a few tables. It offers two kinds of tables: (1) ordinary square wooden table (2) a long table with built in beer coolers.
Food
This is the first time I've encountered a concept that uses quality local ingredients to make authentic Tex-Mex flavor. I really like the idea because it still delivers satisfaction to the customers while boosting our local economy and it is sustainable for the establishment.
I recall my former favorite Tex-Mex place: Orale! - a small hole-in-the-wall serving authentic Tex-Mex dishes which closed down. Perhaps, it was because of the high price of its imported ingredients that made it impossible for it to survive.
Appetizers

These Coyote Wings are deceiving! It didn't look appealing to me but when I tried it I just had to grab more of it before my companions could. Its unlike any wing I've tried before. There's something magical with the coating. The wings itself has subtle flavor but it really works with the dip.

The Nachos are also one of the best I've tried! I think the secret is in the beans!
Coyote Rice Plates

I definitely like more of its beans with these! I know it doesn't look filling but once you eat it, you'll realize that this Beef Barbacoa platter is good for two. If the meat could be more tender, this would definitely be better.

There is not much disparity between the satisfaction you will get from either the Beef Barbacoa or Pork Belly Rice Plates. It's just a matter of preference on which type of meat you want to go for.

My favorite item on the Coyote Cocina menu would probably be the Doble Enchiladas. I think the proportion and preparation of this is perfect! I really like the

Iguana's Authentic Mexican Food (Formerly Zapata's): Cold Beer and Great Margaritas in Angeles Pampanga
I have no idea how going to Pampanga to eat came about. But, I just went along as I'm family are very supportive of whatever family activity. It's probably because my mom taught us to spend time together as much as we can before we' have our own family soon. The next question is... How did we end up at Iguana's Authentic Mexican Food?
All we know is that we're going to somewhere in Pampanga so we typed Nepo Mall on Waze and followed avoided all red lanes as much as possible. A friend who lives in Pampanga suggested that we take the Fil-Am friendship Highway where we could find lots of open Korean establishments. Since we didn't feel like eating Korean, we drove straight from until we saw Iguana's Authentic Mexican Food and decided we want to try it. We had no idea if it was open or closed so I volunteered to go down the car to take a peak.
Turns out they are indeed open even on holidays except Mondays. We were immediately impressed with the interiors. We had a lot of photo moments especially with the fake cactus and Mexican hats that they offer for free. Most diners were foreigners and we seemed to be the only group taking photos.
Everything was widely decorated even the ceiling. We were informed that they used to be Zapata's and had just moved from their old place.
There's also a bar area.
Soups
I wanted something warm to fill my stomach so I ordered the Tortilla Soup. It had tortilla and bell peppers. It was an utter disappointment as it tasted like salt water. It just made me miss the tortilla soup from Chihuahua Mexican Grill which is so good.
Main Course
The Chili Zapata is Iguana's award-winning beef in chili served with fresh flour tortillas, barracho bans and mexi-rice. This is my kind of meal. It was deliciously spicy!
We chose chicken meat for our Fajitas. We were served a sizzling plateful of chicken strips, mexi-rice and grilled sliced bell peppers and onions. We enjoyed the experience of rolling it out on our own.
It was also served with Tortillas, Salsa and Sour Cream. I really enjoyed their fresh Tortillas but I prefer Orale's slightly thicker version more because I like them a bit chewy.
Since we're first timers and want to try as much as we can, we had the Combination Plate: Cheese and Bean Burrito and Beef Enchiladas served with baraccho beans and mexi-rice like our other orders. The Cheese and Bean Burrito looks flat but it was actually fulfilling because of the bean and cheese combo. I liked the Beef Enchiladas more though.
It also comes with a bowl of Mayan Bean Soup. This is so good! I regret ordering the sad Tortilla Soup over it.

Iguana's Authentic Mexican Food is a great place to enjoy Mexican dishes with good company. We had so much fun with the lively place.
