Arla Potato Cheese Balls Recipe by Chef Gino Gonzalez
For this recipe, the cooking stages are divided into three:
(1) Mashed Potatoes
(2) Filling
(3) Sauce
Ingredients for the Mashed Potatoes
500 grams potatoes
6 tbsp. butter
2 Cups Arla Full Cream Milk
Arla Natural Cream Cheese
Arla Natural Emmental or Gouda Cheese (finely chopped)
1/8 tsp. nutmeg
1 tsp. paprika picante or biblbao
2 tbsp. fresh basil (chopped)
Salt and Pepper
Ingredients for the Filling
Arla Natural Mozzarella Cheese (formed into 1/2 inch cubes)
Salt and Pepper
All Purpose Flour
Eggwhites
Japanese breadcrumbs
Curly Parsley (finely chopped)
Ingredients for the Sauce
1 cup whole peeled tomatoes
1 tbsp. garlic (minced)
2 tbsp. onions (finely chopped)
2 tbsp. olive oil
1 pc. bay leaf
1 pinch Italian seasoning
Salt and Pepper
1 tbsp. fresh basil (chopped)
Procedure for the Sauce
Step 1: Saute garlic, onions and whole peeled tomatoes.
Step 2: Add the bay leaf and Italian seasoning with Salt and Pepper.
Step 3: Simmer for 10 minutes.
Step 4: Add fresh basil last.
Procedure for Mash Potatoes
Step 1: Boil potatoes.
Step 2: Drain and while it is hot.
Step 3: Add Arla Full cream milk, cream cheese, emmenthal or gouda, nutmeg, paprika picante or biblbao. Step 4: Cool down completely and form into 30 gram balls.
Step 5: In a scooper, make an indentation using your finger.
Step 6: Put 1 tsp stuffing and form into a perfect ball. Step 7: Add some mashed potato mixture if necessary to seal. Step 8: Dredge in All Purpose Flour, dip in eggwhites and breadcrumbs mixed with curly parsley.
Step 9: Deep fry balls until golden. Make sure inside is not cold.
Step 10: Serve with sauce and top with sprouts.
Arla Pineapple Upside Down Cupcake Recipe by Chef China Cojuanco-Gonzalez
Ingredients for Arla Pineapple Upside Down Cupcake
1/2 cup unsalted Lurpak butter
1 cup packed brown sugar
20 pcs. fresh pineapple rings (sliced into half)
3 cup cake flour
2 tbsp. baking powder
1/2 tbsp. baking soda
1/4 tbsp. salt
1 cup Lurpak butter
1 2/3 cup granulated sugar
1 1/2 tsps. vanilla flavor
1/2 tsps. pineapple flavor
1/4 tsps. yellow food color
4 pcs. eggs
1 cup sour cream
Ingredients for Frosting:
2 cups pineapple tidbits, drained, retain chunks
¼ cup white sugar
2 Tbs. butter
dash cinnamon
pinch salt
450 grams Arla Pineapple Cream Cheese
450 grams unsalted butter, cubed
3 cups confection sugar
Procedure for Pineapple Upside Down Cupcake
Step 1: Preheat oven to 350. Grease 3 loaf pans 9” x 5” x4” rectangular pans with butter or muffin pans.
Step 2: Set aside.
Step 3: Brown unsalted butter in a saucepan.
Step 4: Add brown sugar.
Step 5: Allow to melt then add pineapple rings in batches.
Step 6: Cook until slightly softened.
Step 7: Cool slightly then arrange in the bottom and sides of pan and pour syrup
Step 8: Sift together dry ingredients.
Step 9: Cream butter and granulated sugar until light.
Step 10:Add vanilla flavor, pineapple flavor, yellow food color then eggs and alternately add dry ingredients with sour cream.
Step 11: Pour into pineapple lined pan.
Step 12: Bake for about 50-55 minutes or until done. Step 13: Cool in pan for 10-15 minutes, then invert.
Procedure for Pineapple Cream Cheese Frosting
Step 1: Cook the pineapple tidbits in butter and sugar.
Step 2: Add in cinnamon and salt to cook until caramelized.
Step 3: Drain and set aside.
Step 4: Whip the cream cheese and butter together.
Step 5: Slowly add in the confection sugar and continue mixing until proper consistency.

Rainy days like this makes me crave for warm drinks like a cup of coffee. UCC Clockwork is our family favorite place for that.
Blue Bay Walk is now a lively compound. The crowd seems to be getting bigger and bigger in each of my visits. And, UCC Clockwork is one which seems to be gaining much attention.
I adore each inch of the place. I find to be well-design and spacious. I like the idea that most of the seating area is strategically located on the upper level so you can see the entire first floor where you're coffee and orders are being prepared.

There are a few tables on the side.
There is a cake chiller for off-menu items.
There's an extensive shop where you can buy brewing items. I think this is where we bought our espresso cup and coffee filters.

The Chlorophyll is a green juice with celery, spinach, apple, orange and moringa.
Dessert
This is the best version of the Mango Crepe Samurai I have ever encountered.
Our favorite is the Matcha Mousse Cheesecake. It's not part of the menu so we feel its our lucky day every time we see it on the chiller.

UCC Clockwork is one of the best if not the best coffee places in the Metro. Each coffee variant is prepared with precision using quality coffee beans. The ambiance is also awesome. For such offerings, of course, there's a premium cost for it.

East Cafe: High School Reunion Over Asian Cuisine (Rustan's Glorietta Complex Makati)

Wow! Time sure passed by swiftly and high school memories seemed further and further away in the past. My close friend has returned back from Toronto after finishing her second undergraduate degree there. And, my close group of friends (three of us out of four) decided to go for a little high school reunion in East Cafe.
Makati seemed to be the middle ground for us and East Cafe was quite conspicuous so it offered us the privacy and comfort we wanted. If there is one common denominator we had back then, it was that we were all introverts. Throughout my school years, my teachers remarks on my report card would indicate me being soft-spoken as a concern.
I always wondered what it felt like to see old friends you haven't seen for a very long time. That night, didn't feel any different for me as any other time we hanged out during our childhood. Conservations began and didn't seem to want to end. It was a fun chit chat over our lives and the news about our school mates. I hope we can have another get together before my close friend decides to leave the country to pursue her love life. I wish for her the best.

East Style Maki
Even though my girlfriends and I are timid and shy, we all spoke up to order at least one kind of maki. The Super Salmon Maki had an enticing menu photo so we chose this. We made the right choice! I loved this! Good thing my girlfriends were petite eaters so I ate most of this. =p
Starters
I chose the Malaysian Style Chicken Sate. This is sumptous and moist. This is one of the best rendition I've tried.
Mains
We wanted to have some fish as we were all health-conscious. The Grilled Salmon in Banana Leaf had a description that appeared to be enticing for us as so we went for it. It is salmon fillet with red curry, coconut milk and lime dressing. I loved this too and ate most of it.
The Chicken and Mushroom in Lettuce Cups is a bit too salty for our taste. The soy sauce depicted by the menu as light is is quite bold and strong for us.

Terry's Selection: Spanish Cuisine at Its Best (Salcedo Village Makati City)

The family has long been wanting to try Terry's Selection. We've read nothing but good remarks for this establishment.
So one day, we finally booked our reservation.
While waiting for our table to be prepared, we bought some items from their deli. There's a lot of cool food stuff to buy like ready-to-cook paellas and pastas.
The space is quite limited so we're so glad we made a reservation. Every table is filled with happy diners. Most of them are westerners.
Food
Pica-Picas (Appetizers)
Since it's our first time, we didn't know what to order so we trusted our server's recommendations starting with the Three-Cheese Croquetas.
The Three-Cheese Croquetas is perfect for our family of cheese lovers.
The Chorizo on Piggy Back is choriza flamed on their cute piggy-shaped dish ware. A lot of people were ordering this so we just chimed in. I initially thought that the pig was to be served on our table but it wasn't. It was just lit on the kitchen counter-top so while it was there I grabbed the chance to snap a shot.
The Chorizo on Piggy Back did not disappoint. It had the right blend of savory flavors.
Nuestras Tortillas (Spanish Omelets)
I don't recall having tried Spanish Omelets before so I was excited to have one.
The Tortila Española was simply described in the menu as potato omelette so we all didn't expect it to be so beautiful and delicious!
Nuestras Ensalata (Our Salads)
The Terry's Caesar Salad is a mix of healthy and guilty pleasures - both of which we enjoyed!
Sopas y Cremas (Creams & Soups)
We decided to split the soups into half so we can try more dishes. The Pumpkin Soup is a classic choice. This one lived up to our expectation.
The Duck and Vegetable Soup is light with a nice savory taste from the duck meat.
Since we all love garlic. The Castellano Al Ajo won over us.
And, the Onion Soup was as good as the rest which made choosing difficult. So, I suggest that you should follow your preference.
Arros y Pasta (Rice and Pasta)
The Super Paella Parellada is the highlight of our dinner. Definitely worth it!
The Shrimp Risotto is one of the best risotto dishes I've ever encountered.
Postres (Desserts)
My family who liked leche flan swiped the Tocino de Cielo plate clean.
The Picatostes con Chocolate piqued our interest. It is our first time to try some picatostes. It is a Spanish pastry that is dipped in milk and sweet sherry, then golden-fried and sprinkled with sugar and cinnamon.
To pair it with our dessert, we ordered some coffee. I had the Cappuccino. Lovely cup right? Loveable taste too.
